making Kimchi in København

Sunshine day, A gives me her coat and scarf to keep me warm. We make Kimchi in a Korean family today.


prepare the Chili sauce for Kimchi, special Kimchi chili fragments are added, no mini fresh shrimps are added because it could not be found here.


大白菜不需要清洗,把它們一片片地排好,在菜葉的位置加入粗鹽,然後用手把鹽在菜面上塗均,一層菜鋪上鹽後再鋪另一層,慢慢地鋪,鹽會把菜裡的水份抽走,菜會慢慢縮小,慢慢地鋪,二個膠盒可以放入六個大白菜。




一小時後,白菜的水份被鹽份抽走,白菜變軟,縮小,吃下去時菜仍然是沒有味道的。這時把白菜上的鹽份洗掉,放在一邊待乾後塗上辣汁。
